Homemade Cashew Cooking Cream

Ingredients:

  • 150 g raw cashews
  • 150 ml water (add a bit more if you prefer a thinner consistency)
  • 2 tbsp olive oil (optional, for richness)
  • 2 tbsp lemon juice (for that slight "tang")
  • ½ tsp salt

Optional additions:

  • ½ tsp mustard
  • ½ tsp garlic granules

Instructions:

  1. Soak: Place the cashews in a deep bowl and cover them with water. Heat them in the microwave or briefly boil them on the stove. Leave the cashews in the hot water for at least 30 minutes to soften.
  2. Blend: Drain and rinse the cashews. Place them in a blender along with the fresh water (150 ml), lemon juice, salt, and olive oil (if using).
  3. Adjust: Blend until you achieve a perfectly smooth and creamy texture. Depending on the power of your blender, this may take a minute or two. If the cream is too thick, add a splash more water to reach your desired consistency.

Note: Keep in mind that cashew cream will thicken slightly when stored in the refrigerator.

  • Store: Pour your cashew cream into a jar and store it in the fridge. It will keep fresh for 7–10 days.
  • How to Use: Use it just like regular cooking cream! It’s perfect for thickening soups, enriching stews and pastas, or as a base for salad dressings and sauces.
