Instructions: Drain and rinse the cashews. Place them in a blender along with the cocoa, sweetener, milk, vanilla, and salt. Blend until completely smooth and creamy. Serve in cups topped with fresh berries or crushed nuts.

Plant-Based Cashew 'Cream Cheese'

Ingredients:

  • 1 cup cashews (soaked for 30 mins in hot water or overnight in cold water)
  • 100 g plain tofu
  • ½ cup water (adjust for desired consistency)
  • 2 tbsp lemon juice
  • 2 tbsp nutritional yeast (or 1 tsp white miso paste)
  • Salt to taste
  • 1 clove garlic (optional)

Instructions (Basic Version): Drain the soaked cashews and place them in a blender. Add the tofu, lemon juice, nutritional yeast (or miso), salt, garlic, and water. Blend until perfectly creamy. Store in a jar in the fridge for 5–7 days. Use it as a spread on toast, in sandwiches, or as a creamy addition to roasted vegetables.

Instructions (Fermented Probiotic Version): For a deeper, complex flavor and gut-health benefits. Prepare the mixture as above, but omit the salt. Stir in the contents of 1–2 probiotic capsules. Transfer the cream to a glass jar, cover with a cheesecloth or clean kitchen towel, and leave at room temperature for 12–24 hours (until it develops a slightly tangy aroma and taste). Once fermented, stir in the salt and refrigerate.
